Radicchio – I have worked out the best way to eat it. Pan grilled using a little olive oil and then tossed through the salad. This way the bitter green is piquant and tasty and not too much.
Pan grilling the tomatoes and radicchio in the oil then pouring onto the lettuce immediately slightly wilts the lettuce. Add the balsamic vinegar a touch more olive oil if necessary season with salt and pepper and fresh thyme leaves.
Not many broad beans tonight so I tossed them through the pasta for the last few minutes of cooking time, then stirred garlic and olive oil through the pasta and broadbeans.
Lovely meal and from the garden broad beans, tomatoes, radicchio, thyme and the very pretty lettuce.
