Fruit Compote for Breakfast

1kg of dried fruit such as apples, apricots, peaches, pears, apricots, prunes, and a handful of sultanas.

Cover with water and bring to the boil. Turn heat off.  

Generously add vanilla essence and honey at least a tablespoon of each.

Taste and adjust as necessary. Leave to soak overnight.

This goes brilliantly with bircher muesli. Or eat with yogurt for a delicious breakfast or dessert. I can eat this all day.
