Ann Jensons curried lentil soup

Recipe for curried lentil soup:

heat canola oil and add garlic, onions, ginger, chilli, cinnamon, then a cople of cups of rinsed lentils,and cook lentils until coated with the mix. Then slowly add stock, 2 tblspoons tomato paste, some lemon juice. When the lentils are cooked, cool and puree, then reheat to serve and add low fat plain yohurt.

When Ann sent me the recipe this was her note.  “This is good food. We have been living off our garden for a long time….winding down a bit now we are meant to be selling our place…check it out on Catherine Mansefield’s facebook (don’t mix it up with The Katherine Mansfield – spelled differently) . I have alpacas and geese.”

It looks like a beautiful place.

The soup was delicious. My whole family even the man who is not to fond of lentils really enjoyed it.  I found I needed about 2 litres of stock.
