A delicious quick and easy vegetable dish.
Saute 2 or 3 or 4 chopped cloves of garlic and some sliced onion in a good splodge of olive oil. Add lots of sliced roughly chopped tomatoes. Cover and let simmer till tomatoes are soft. Stir through silver beet and cover again for a couple of minutes until silverbeet is cooked.
Always tasty. For a light lunch poach eggs in mixture and serve with a crusty Italian bread.
The secret is plenty of garlic.
