One of The Good Man’s favorite meals is Lamb Saag. An Indian meal with Lamb and Spinach. Today is his birthday so this is what he chose for his birthday dinner. It is simple to make and always a tasty dish. Also it is a dish that doubles easily and tastes even better a couple of days later.
8 good sized chump chops.
2 onions sliced and chopped,
2 cloves of garlic chopped.
Fenugreek, Coriander, Turmeric and Chilli.
150g Raw Cashew Nuts, roughly chopped.
1 cup of apple juice
Brown the lamb chops, then add the sliced onions and garlic to the pan, once they have softened and started to brown. Add the spices generously. I used about a teaspoon of fenugreek, 1 teaspoon of chilli, 2 teaspoons of coriander and about the same as turmeric. (but I have to say I don’t really measure, so work it out to taste)
Once the spices become fragrant, put the chops back in. Add 1 cup of apple juice cover and simmer until meat is tender.
Stir through chopped raw cashew nuts. Add spinach cover and cook a few minutes until spinach wilts.
Serve with Basmati Rice and I added a sprinkle of sprouted fenugreek seeds.
A few days ago Promenade Plantings in her Cooks Cheats posted asked her readers what is your secret ingredient. Apple Juice is one of mine. You will find it popping up everywhere, it is the main ingredient in apple and apricot spread. I use it with Pork and Chicken. This is the first time I used it with Lamb and it was brilliant. It added an amazing richness to the sauce.
Because my good man is dairy free, I nearly always make him an almond cake for his birthday. He loves this cake. I have had the recipe for 30 years and make it regularly it is very simple and everyone always loves it. Today I poached orange slices for the top of the cake. I will give the recipe tomorrow.
