                   Roast Veal with Apples

A beautiful piece of Roast Veal.  Veal is a light tender meat which benefits from gentle cooking.

1. Brown the Veal

2. Cover the veal with chopped garlic, rosemary and olive oil.

3. Cut Sweet apples in 1/2.  Sprinkle with garlic and rosemary dressing.

4. Pour 1/2 cup of apple juice over both veal and apples.

5. Cover with foil and cook in a slow oven for around 2 hours until cooked.

Serve with lots of roast vegetables tomato, potato, onion, and carrot.

Green Vegetable – Perpetual Spinach.

 The seedlings are starting to show, the water chestnuts and kang kong, the tomatoes, rocket and kale, I think the small feathery green one is Anise.
