Yesterdays Radicchio inspired me to cook it again. However I cooked it too long and it was very bitter. It needs to be cooked quickly to keep it tender and lessen the bitterness. I roasted tomatoes and oregano with the radicchio again. Even though most of the radicchio was too bitter to eat, the combination of tomatoes and oregano works well.
I have a whole row of radicchio growing, tomorrow I will thin them, cut the tops off and discard them and wait for the second tops to grow.
