Talitha missed her mothers cooking – Pasta with Gremolata

Talitha’s back home from a week of camp food. She missed me, she missed my cooking.

Tonight Pasta with Gremolata, meat sauce and fresh garden salad with thyme.

Gremolata is a traditional accompaniment to osso buco.  But is delicious on Pasta.  It is parsley, garlic, and lemon zest or lemon juice.  A mortar and pestle is the best way to make the Gremolata.  Put the parsley into the mortar  first, Using scissors chop the parsley finely, add 3 or 4 cloves of garlic a good pinch of rock salt and crush with the pestle, add lemon juice.

Stirred through the pasta with a little olive oil, it is delicious you could eat it alone.

We picked another basket full of tomatoes. I am planning to cook Jamie Olivers Roast tomato soup for sunday lunch
