How do you feed your family lovely wholesome soup made from scratch. When you work full time.
Day 1. Roast bones in oven for around 30 mins till nice and brown
Day 2. Cover bones with water and let simmer for 2 or 3 hours. Throw in an onion or 2 and a carrot or two.
Day 3. Heat some olive oil, and saute onions and chopped potato for 5 or 10 mins, add stock taste and adjust seasoning add a beef oxo cube if it needs extra flavour. Add any vegetables and/or cooked meat.
Heat through and serve with toast or dumplings. The first two steps only take a few minutes. You pop it in the fridge between steps. I leave it in the pan and sit the pan on a wooden board.
Todays soup has lots of lovely kale and parsley from the garden.
