Cooked Mung Beans and Choy Sum

Peel and finely chop a 2-3 cm piece of ginger, crush 3 or 4 cloves of garlic. Fry until starting to brown in 2 tbs oil. Add Choy Sum leaves, mung bean sprouts and a good sprinkle of soy sauce. Take off heat just before leaves start to wilt. The Choy Sum and the Mung Beans are both delicate flavours which need very little heat.

Sweet Potato mashed with apple juice.

The nicest way to cook sweet potato is to peel and slice and cook in a small amount of apple juice.  When sweet potato is cooked mash the potato into the apple juice.

Everything was sprinkled with fresh coriander.
