My first lot of silverbeet is almost finished, my second lot is growing well and ready to start picking. This weekend I’ll plant another lot of seedlings. Because it grows so easily, and is so healthy and can be eaten with anything. It grows so well just pop it in the soil, water and pick the leaves as you need them. I love colour so I always get the multi coloured stems.
You can put them with anything. Tonight I poured boiling water over them and dropped them on top of a Spanish Omelette. You can stir them through Pasta with a bit of garlic. Add them to soups, stews, stir fries.
The young leaves can be shredded and tossed through a green salad.
