This is the simplest recipe for a delicious dairy free cake. I have had this recipe for more than 30 years and have lost count of how many times I have made this cake. The good man loves it and usually requests it for his birthday.
400g ground almonds
500g castor sugar
8 eggs
1 tsp vanilla
Beat yolks and sugar until thick and falls in ribbons from the beaters. Fold in the almonds and vanilla
Beat egg whites till light and fluffy, fold in to yolks and almonds.
Bake in a large tin for at least an hour.
This cake can be eaten as is, but for this one I poached orange slices in sugar syrup added a couple of teaspoons of orange flower water and placed them on the top of the cake.
The poached orange slices on top look fabulous!
